Pesto is, by far, one of my favorite healthy dishes. I make it alllll the time! Since it is a frequent dish in the house, mixing it up and putting a twist on things keeps it from ever feeling repetitive.

Introducing... Pea & Mint Pesto.

You can make "pesto" with a ton of substitutions. Obviously, they all taste a bit different but exchanging different greens or different nuts can turn boring old pesto into something new and exciting.

This is my favorite version yet! It is a healthy snack and is something you can eat while dieting as well. It's on my list of "skinny snacks", just one of those guilt free foods I can eat whenever I want.

My mom suggested I bring pea pesto to a Christmas party last year and, since then, it has evolved into my own little creation. Instead of traditionally using basil, I use organic frozen peas as the main ingredient. In all honesty, I've never really liked peas so it's kind of crazy how I even got to this point but trust me, it's a winner.

I also add fresh mint! This combination of ingredients really compliment and balance each other out.

It is the perfect dip to bring to a party if you want to subtly impress.


This takes all of 5 minutes to create and less than 5 minutes to inhale! mmmm {insert pig 'oink' noises}

In a food processor or blender mix the following ingredients:

2 cups organic frozen peas (still frozen - do not thaw or heat)
Juice of 1 lemon
2 cloves of garlic
3/4 cup olive oil
1/4 cup pine nuts
1/4 cup parmesan cheese
1/4 cup fresh mint leaves

Salt and pepper to taste 

I add about 1/4 teaspoon of pink himalayan sea salt. The cheese adds a bit of saltiness. Add a little or as much as you like.

Blend everything together until the mixture is nice and smooth.

I LOVE LOVE LOVE to eat it right away while it's still icy cold from the peas. Definitely try it like that first and if you want it to be a bit warmer you can refrigerate it for 30 min - 1 hour.
