Yesterday, I was so hungry when I got home from work but I looked at the clock and it was only 4:00. I typically don’t eat dinner until 7ish because I get hungry during the later hours and it’s such a struggle for me not to snack. So, I decided to make a little pre-dinner treat to curb my appetite.

Here’s the thing, I LOVE PICKLES. I do not discriminate against any pickle; I love them in all shapes, sizes and flavors. Since I was so famished, I started snacking on some bread and butter pickles and when the smoked salmon caught my eye I created this amazing little appetizer.

Ingredients
Your favorite flavor pickle
Smoked salmon
Goat cheese
½ Lemon
Arugula
Salt
Pepper

Pickle wraps
Begin by laying the salmon slices onto a flat surface. Evenly place small dabs of goat cheese along the salmon from top to bottom and repeat that step with the arugula. Place the pickle at the top of the slice and begin to loosely roll the salmon with the ingredients inside. Squeeze a fresh lemon over the top of the rolls and season with salt and pepper. Enjoy!
